You can do various things with leftovers, even casseroles!
let's just say you made an Italian or Greek casserole, maybe it was eggplant, zucchini, even noodles.
What do you do with the leftovers?
One option is just simply to reheat it.
That makes sense.
Here is another idea (Your cook probably can't do this.):
Take some health food garam masala powder, and some health food curry powder (if different; maybe the curry powder has turmeric and ginger, the garam does not....), throw a little of each ( couple teaspoons only), your choice of proportions, into a skillet.
Toast very briefly. One minute. Do not burn.
Add the leftover casserole (and other leftover) item or items, and enough water to make sauce. Cover and simmer for 10 minutes on very low.
Then you can say, "I made Indian food tonight!"
Serve with store bought toasted lavash, say sesame. Like Papadums.
