You can make a mayonnaise to go on barbecue. There are recipes out there, of course...

Why not one not overwhelmed by, say, catsup?

Almost an oil based spread, for cold, grilled barbecue meat, for sandwiches? Indian tandoori cooking uses yogurt based toppings, as well as marinades, for barbecue type dishes.

That is not exactly what I am talking about, but the Indian tandoori seasonings might be instructive here.

What would that be like?

It would have seasonings of your choice, in an egg yolk and emulsifier and oil mixture, with sufficient acid up front to thicken the oil you choose.
