The title says it all.
Say you have some good southern onion gravy. Made with oil, flour, browned onions, optional garlic, water.
Let's say you have a lot left. What do you do with it?
There are so many things, red eye gravy, white cream sauce, etc., but this is just another one:
You add Mexican ingredients to it!
If you have leftover red eye gravy, then leave out the additional tomato ingredient below, since it already has it!

Add: Chili powder, some cumin, cilantro, tomato sauce or paste, additional oil or butter, to taste.
This makes a nice enchilada sauce. The basic flour gravy was the hard part, and that is done in advance.
Use this in any enchilada recipe.
Trowel it into the baking dish. It is hard to have too much.
