THE MENU DORMOUSE IMPROV

This was a great delicacy for the Romans.
Say no more.

It is rather like a small squirrel.

Cook the same way, if you can get one of these little rascals.

Terms search: squirrel.

Assuming you can't get a few large juicy squirrels, I suggest, as an improv substitute, using commercial quail.  These would be great barbecued whole, sort of a dormouse or quail kebab. My favorite would be, say, Tandoori Quail. Marinated in the yogurt tandoori spice preparation, then skewered, and barbecued rather than done in the tandoor. But that's not Roman! Or Indian! Or Greek!
