THE MENU DORMOUSE BONE IN SALTIMBOCCA

In this recipe, you don't bone the little rascals, but rather butterfly them, and treat as you would traditional veal, or Americanized chicken, but don't roll.

Quail are more boneable, by someone with skill. These could then be pounded and rolled.

You could do game this way, but I would marinate it first in a saltimbocca type sauce.
