THE MENU SIDE OF POTATO IMPROV

Here are a few ideas.
You can do whole baked or quartered roast potatoes cooked with a roast, almost any roast, beef, pork, lamb, chicken, etc, then do a sour cream and minced sauerkraut, sweet onion and  or dill pickle spread for the potatoes.
 
Why would you do this? Three reasons at least:
It not only tastes good, but it is probiotic in more than one way. It is also easy, because you are cooking the side with the roast.
 
If you are diabetic, and now I am thinking of Robin Ellis' books, you might substitute squash, turnips, bell pepper, and or eggplant, and or even roast purple or white cabbage, for potato.
You might even use sweet potatoes. It is not commonly known, but sweet potatoes are not so bad as regular ones, for diabetes.
