THE MENU TRUMP CHRISTIE LUNCH WHITE HOUSE MEATLOAF PAT NIXON OR ME

This is the traditional White House Meatloaf, since Pat Nixon's day, apparently. Who knows whether it has ever been tampered with?  I will quote it, then tamper with it.
  • 1.5 pounds ground beef
  • 3 tbsp bread crumbs
  • 2 tbsp whipping cream
  • 2 tbsp tomato sauce
  • 1 egg
  • 1 tbsp chopped parsley
  • 2 tsp salt
  • ¾ tsp ground black pepper
  • 1 tsp seasoning salt
Mix all ingredients well with meat; form loaf. Place loaf in pan, cover top with additional tomato sauce (spread very thin over loaf). Bake for 50 minutes. Set oven at 375 degrees and turn down to 350 degrees after 30 minutes. Serves six.

Here is my suggestion for meatloaf. 'This meatloaf is fabulous', as Trump said of Pat's:
 
2 pounds ground ribeye, filet, or sirloin
1 diced large cooking onion
2 tbs dry white wine or fino sherry
2 tbs brandy
crushed rosemary to taste
thyme to taste
bay leaf on bottom of casserole dish
5 cloves crushed garlic
3 tbs minced mild Greek pepperoncinis
2 tbs nonpareil capers
2 tbs rendered smoked bacon fat
2 slices low gluten bread, millet sourdough or ancient Grains.
 
Mush this all together and roll it into a narrow high pyrex baking dish. Bake for 45 minutes at 350.

If you want this sort of Kosher, leave out the bacon, and dairy in the bread.

Question: Wouldn't Pat's have to leave out the whipping cream? Trump's staff can look into that.

If you want gravy, to mix with mashed potatoes, pour on the meatloaf, or to go with rolls, I suggest adding, gradually, 5 tbs room temp olive oil and/or butter, half way through the baking, then, when it's done, pour three or more tbs off, into a separate sauce pan, and make a flour based gravy in the traditional way.

One could go in many different directions on the flavor of this gravy, using water, beef bouillon, tomato sauce mixed with water, milk, cream, or some combination, etc. 

For primates of Park Avenue, almost all of this can be bought off the shelves up there. You do have to dice an onion....maybe. You can simply line the dish with bought smoked bacon strips. Why bother to render fat? You're done!

Baked potato, in the same oven, and you get a 1 pound clam shell of organic baby greens, and that's it! The oven does most of the heavy lifting. Dry Chardonnay, your favorite.
