I live where I can drive a mile or two, and go to a fishmonger.... This is the local old school bait and tackle and fresh fish retailer, where they still will fillet whole fish you buy there for you, on demand.
I am not going to buy any fillets.
I am going to the back, roofed, open, metal, porch, where they fillet them and hose them down, right there into the creek, and ask if they can spare a few fresh cut fish heads or carcasses, and ask them how much!
