A long time ago, I used to make these. I made them for dinner parties, four at a time. I once made six I think, as gifts on top of the party.
Anyway, these are the easiest things to make.
Graham cracker butter sugar crust. Some combination of cream cheese egg yolks and sour cream seemed to work best eventually. I didn't make the Italian ones with ricotta very often.
I sometimes did preserve toppings, so the cheesecake itself I made not so sweet. Strawberry was a favorite.
You can put on some weight eating these.
