Slice some cutlets from the roast from yesterday.
Dredge them in Lea & Perrins or reduced Dry Marsala.
Flour and fry them briefly. They are already cooked. That is the beauty of it.
You could serve these with say french fries or risotto, or bruscetta.
The fries you might dip in a mildly spicy aioli mayonnaise, not ketchup.
