What is especially interesting is his account of how the Japanese genetic resistance to mad cow disease differs from that of the rest of the world. 

But it is still a resistance that developed only there, over thousands of years of prehistoric cannibalism in Japan. Don't kid yourself. 

The Japanese did not get it by eating soy bean curd or miso or fish sushi!
