THE MENU EAST EUROPEAN BEETS IMPROV

This is the best thing possible.
Quarter or eighth organic beets. Leave the peel on, but soak and scrub off dirt.
Dice a large onion or two.
Put beets and diced onion in a boiler to comfortably fit.
Add leftover dill pickle juice from the jar, preferably organic. You can add some water or broth. Garlic is already in the pickle juice. Simmer until tender.
Serve with sour cream. Russians and others would throw a piece of marinated herring or whatever on top.
These beets can be eaten cold or room temp.

If there is enough, later, days later, make borsht, with other root veg, cabbage is a classic, and whatever. Cook the other raw stuff, then add the leftover beets and juice.
