VARIATION ON PRIOR PASTRAMI IMPROVS..........
In this version, just use garam masala (!), which contains clove, allspice, coriander (?), and cardamon anyway. Smoked paprika. Garlic powder.
I add a dash of cumin. I just throw in a little prepared mustard. Black pepper is a must.
Recipes that overly Cajunize it, hot pepper, etc., I would avoid.
I use thyme and say oregano instead of marjoram. I hate marjoram.
I put capers in. It is a quirk.
Skip the leftover pickle vinegars from prior versions.
