THE MENU

This is another pastrami improv.
Take a chunk of roast pork butt or Boston butt.
If you are Jewish, you could do this with a beef roast, or even lamb.
Jam a basically rectangular chunk of it into a 12 or 14 oz wide mouth jar w lid so it mostly fills the jar.
Pour in some sauerkraut juice and mild Greek pepperoncini juice.
A pinch of garam masala, half tsp sugar, some crushed capers.
Let it sit in the fridge for a day or two.
