 Roast chicken gizzards with smoked bacon.

Someone may recall Delmonico Gizzard Wellington.

This dish would serve as a prelude, and ingredients, for that one.

Leftovers from this would be minced into the gizzard pate, and gizzard gravy made, for that one.
