THE VALENTINE'S DAY MENU DEDICATED TO THE PRIMATES OF PARK AVENUE

They are serving rabbit, down the street, for Valentine's Day...
Very well prepared, I am sure... 

I am not ordering it. My reason?

My mother, back when she could recall her youth, pointed out to me, in no uncertain terms: 

"Squirrel is a lot better than rabbit."

She had been in a position to know.

Bear in mind I am not suggesting that one ought to eat squirrel for Valentine's Day, were one even able to find such a thing. 

I am merely recounting her assessment of relative merits of those two animals, and setting them on a scale, of sorts.

That culinary admonition has stuck.

I recommend roast quail in a French cream sauce made with a roux and milk, not cream, and mushrooms. Root vegetables or risotto.
