THE MENU LEFTOVER WILD BOAR RAGU ASIAGO POLENTA BEET PICKLE MINESTRONE IMPROV

This is not really so much a borsht as it is a minestrone, with a polenta base, some marinara sauce and roast wild boar chunks, and added water to lighten it a little.

Think of is as rather a Russo Italian minestrone. 

You could also call it Russian wild boarsht. 

The wild boars are Russian.
