THE MENU PICKLE RELISH

Even such a simple thing as this is almost a lost art.

I am going to try to do a so called hot dog or hamburger relish, similar to what was once available.

You start with dill pickles, health food ones, diced very fine.

The health food store sells what are now called sweet cherry peppers. They are not actually sweet, but that is what they are called.

You can also use mild pepperoncinis, diced fine, but they must actually be mild, which can be hard to get. 

Sweet onion, finely diced. This is required too.

If you mix these three or four ingredients together, in the proportions you think you would like, you approximate to the best old pickle relish.

My grandmother used to put something like this on her black eyed peas. Hers was made in batches at home and ' put up ' in jars, Kerr, Ball, or Mason, which then lasted, unopened, on the shelf for over a year.
