RE MICHAEL LEWIS AND THE MORAL CRITIQUE OF OUR INSTITUTIONS
I want to talk about this theme at greater length tomorrow.
He has written books on this theme regarding Wall Street.

RE WHAT HAPPENED TO THE DEMOCRATIC ELITE
The topic of elites, any elites really, throughout American history, is a can of worms.
It seemed necessary, to me, to go back to the beginning, and before the beginning, and to try to understand how the concept of classes, if any, developed here, in comparison and contrast with, as well as in tandem with and in isolation from, Europe, in the first place.
I don't know if one can get a clear sense of this history by reading say Tocqueville.
I have been reading Palmer, and before that several other authors, Doyle for example, as background. There are of course countless books on these topics. Bailyn, Ideological Origins, as well as his shorter work on American Politics, is a good introduction to this as well, more political than social or class history. Palmer has a very helpful chapter, "Democracy Native and Imported", which contains some very useful insights on these matters regarding the founders, party origins, and class notions.

The US would never have even been allowed to develop an industrial base here, were it not for tariff and import restriction protection.
Of course, economists don't even agree with that, arguing that it was not really necessary for us to ever develop industries in the first place here when, without them, we could get manufactured goods cheaper shipped in from abroad.

THE MENU PRIMATES OF PARK AVENUE LUNCHEON IMPROV SANDWICH
This is a great sandwich. It is not the usual.
Sliced ham, either baked or smoked, sliced baked or broiled sea scallops. If ham is prohibido, use smoked turkey breast, or just provolone. Scallops too? Skip them and use sliced broiled cod.
Sliced sweet onion. You don't even have to cook any of this, just buy it at the deli. Send out for it.
I would say use a mild white bread, not toasted, and mayonnaise or butter only, mustard is too strong.
This would go well with potato chips, or European French fries with mayonnaise on the side.

This is just the kind of article that has made economists like Krugman whipping boys on my blog.
It contains almost all of the ingredients I most detest about that profession, gathered into one tidy place. The one exception is his insight re Smoot-Hawley not have caused the Great Depression, but rather having been a consequence of it. This Smoot-Hawley causation theory has been an article of faith among American thinkers, think tanks, and economists ever since, a total chimera.
Who is his target audience?

I will spill the beans: Corporate America. (This term, itself, is an artificial economists' choir boy, since as a result of economists' globalization ideology there are not really really big corporate America players which are not really, under the skin, mainly global entities in their goals and allegiance.)
It's that global readership that he accuses, tips his hand there really, is in denial. It is not average, or poor Americans, or even upper middle class ones. He refers to them. They don't know yet that they're being betrayed. He tells them, but he knows it doesn't matter. He hasn't thought of the Kennedy Fallacy yet; it is not in the economists' lexicon. It is really the big management boys he is speaking to here, not so called big labor; the Kennedy Fallacy is not up for discussion.
It is Global Corporatism that is his real audience, but he can't say that; he is still behind a mask.

Do you think he cared about the lower levels of society there, when he wrote it, that that was his audience there?

Krugman shines a light on one of the most enormous flaws in our constitutional system of government: the problem of too much authority over trade lodged in the Executive (amid not enough authority for the whole system in general.) Thank you Paul Krugman.

I cannot talk about the Volume on Aristotle, as I only had had the first 5.
Now the public library has volume 3, and I have checked it out.
Maybe I will take a look at his Aristotle.

My grandmother used to make greens a certain way, and then doctor them a certain way as well. Why not describe it.
The best, at that time, were turnip greens. You cooked them with a two or three inch cube of fat back. For a long time. I personally, now, would use bacon fat. Eat the bacon separately.
She ate them with diced raw sweet onion, and a kind of pickle relish which as I recall they made there at home, and a piece of corn bread as a pusher.
I have now found that what are called sweet cherry peppers approximate to the pickle relish she used. Of course it is not technically sweet, but not hot. It is mild and pickled. That is what sweet means there.

THE MENU CHICKEN GIZZARD PATE IMPROV
This is not something you ever ran across, perhaps.
The taste for chicken gizzards seems now to be a lost Epicurean preference.
I don't know why.
Anyway, these little rascals are really great.
They have a gristle along the back side. Never mind. I used to simply chew the fronts off.
To make pate, saute or even broil these little babies brown. Do the same for hearts, if they are there.
Then carve or scrape, the gizzard fronts off, and discard the gristle backs. Don't just throw them in a food processor whole, or you will have a gristly pate, and no one wants that.
Some ignorant people say "throw chicken hearts away", if they were bought packaged together. That is truly idiotic. You very finely dice the cooked hearts and use them in the pate too.
Then make pate as you would, or perhaps only as I would, with chicken livers...
You can then use this in a variety of ways, just like any other pate.
Say, even, "Beef Wellington Chicken Gizzards..."
Regarding Beef Wellington, I suggest using only the fat end of the ribeye, sometimes still called a ' Delmonico ', rather than the filet mignon. Just a thought.....
Call it " Delmonico Gizzard Wellington".
If you could catch a buzzard, you might do "Gizzard Pate Stuffed Roast Buzzard."

THE MENU RISOTTO LEFTOVERS IMPROV
Why not use a few offbeat things, like, say, chicken gizzards?
You can combine these with, say, shrimp, or Venetian crawfish, escargot, and some kind of spicy but mild Mediterranean sausage, even say Genoa salami, or just bacon fat, and have a kind of crude, rustic, paella.
You could use leftover roast chicken slop as a base for the risotto or paella. You could think ahead, not very improvisational...., and cook gizzards along with a roast chicken, up front.
This might go with say, Oscar Peterson? Bonfa, A Day In The Life Of A Fool? Maybe something more like that...
Perhaps a little later Paul Desmond...
I would pair this with my Faux Caesar. Oh, I haven't described that yet!
