Most people find that black walnuts aren't easy to incorporate into things and avoid their bitterness, strong flavor, and hardness when left in pieces, and their dryness when ground.
Here is an idea. Use melted black walnut ice cream as an ingredient analogous to milk. You can even strain the black walnut pieces out, but they can also be left in, for a crunch.
This would work especially well for say black walnut pancakes or crepes, by simply using say melted Blue Bell ice cream. Blend the melted ice cream with milk or yogurt. For milder pancakes, and less sweet, cut the ratio of melted ice cream with milk or yogurt, or some other liquid ingredient you favor, for pancake batter. Do not add sugar.
For gluten free, buckwheat flour works great.
